Chicken Fajitas provide plenty of lean protein and high-nutritional value in a flavor-explosion package. Reasonable preparation time. All natural ingredients. Make enough to freeze for multiple meals. And enjoy the “Mexico” theme together with my Black Bean Burritos and Guacamole Dip. These Chicken Fajitas are an excellent post-workout meal to refuel, and they taste great knowing what’s in them and what I’m putting in my body.
Ingredients
4 Tbsp canola oil
2 Tbsp lemon juice
Salt, to taste
Oregano, to taste
Ground cumin, to taste
Chili powder, to taste
Paprika, to taste
Cayenne pepper, to taste
Minced garlic clove
2 lbs boneless, skinless chicken breast, cut into strips
1 each red, green, yellow, orange sweet peppers, julienned
3 yellow onions, thin sliced
Large flour tortillas (10 inch)
To garnish Fajitas: shredded cheddar cheese, salsa, sour cream, chopped scallions, guacamole


Prepare and Marinate the Chicken
Clean, trim and slice the skinless, boneless breast of chicken into thin strips.

In a large, resealable plastic bag, combine 2 Tbsp canola oil, lemon juice, seasonings, minced garlic, and add the sliced chicken. Seal and lightly toss and turn to coat the chicken with marinade. Refrigerate from one to several hours.

Prepare the Chicken Fajitas Filling
In a large (12 inch) frying pan, saute peppers and onions in remaining canola oil until crisp-tender (do not overcook). Remove and keep warm.

In the same frying pan, cook the marinated chicken (remove any excess marinade) on medium-high heat for 5-10 minutes, turning frequently, until no longer pink.

Add sauteed peppers and onions to pan, mix with chicken, and heat throughout.

Consider setting aside left-over Chicken Fajitas filling in a glass Pyrex dish to refrigerate (can be kept for a few days) or to freeze for additional meals.

Serving the Chicken Fajitas
Spoon the filling down the center of the flour tortillas. Add additional items to the filling, then fold the tortilla in half to eat. Or fold the tortilla in half after filling, and add additional items on top of folded tortilla. Additional items may include shredded cheddar cheese, salsa, guacamole (I used avocado chunks), chopped scallions, and sour cream. Enjoy!
